21 Day Fix Chicken Salad

Serving size 1 1/4 cup
Serves 4
Containers: 1 green, 1/2 purple, 1 red, 1/2 blue, 1/2 orange

21 Day Fix Chicken Salad

  • 3 cups chicken breast, cubed (rotisserie works great)
  • 1/2 cup chopped green apple
  • 1/2 cup seedless red grapes, cut in 1/2 or 1/4
  • 1/3 cup slivered almonds
  • 2 green onions, sliced
  • 1 tablespoons chopped fresh basil (optional)
  • 1/2 cup honey salad dressing (below)
  • 8 cups shredded romaine lettuce

Honey Salad Dressing

  • 1/2 cup reduced fat (2%) plain greek yogurt
  • 3T raw honey
  • 3T rice vinegar
  • 1/4 cup extra-virgin olive oil
  • OPTIONAL: 3T Dijon mustard, gluten-free (I didn't use because not my favorite)
Mix yogurt, mustard, honey, oil and vinegar in a medium bowl and whisk until combined
Combine all ingredients except for the lettuce in a large bowl, mix well, and refrigerate (covered) for 2 hours (mine never makes it that long because I never plan ahead!)
Serve 1 1/4 cups of the 21 day fix chicken salad over 2 cups of romaine lettuce.
YUM!!
