SOUTHERN-STYLE CRISPY "FRIED" CHICKEN 😍

RECIPE:
CHICKEN:
-4 chicken breasts, patted dry/ flattened to make even (1 per person)
-3 eggs beaten
{DRY BATTER}
-1/2 cup steel cut oats
-1/2 cup (whole wheat) PANKO crumbs
- 2 tsp: garlic powder/ paprika/ onion powder/ black pepper
- 1 tsp: sea salt and cayenne pepper (less if you don't like spicy)
2 tbsp olive oil

2 tbsp olive oil
Dip your chicken breasts in the egg mixture and then into the dry mixture. Do this twice for EXTRA crunch!
Heat skillet to medium and when the oil is ready, lay in your chicken for 4-5 minutes!! Flip your chicken in the skillet for another 2-3 minutes and place in a 425 degree oven until cooked through!!!

While that is cooking, slice up a sweet yellow onion and begin caramelizing it in a new skillet! When onion starts to become soft, add in your zucchini and squash! Season with sea salt and black pepper!!
